Ingradients

2 oz Unsweetened chocolate

1/3 c Unsweetened cocoa pwdr

1 1/2 c Milk

2 Large eggs

1 c Sugar

1 c Whipping cream

1 t Vanilla extract


Directions



1.Melt the unsweetened chocolate on top of a double boiler over hot, not boiling, water. Gradually whisk in the cocoa and heat, stirring constantly, until smooth. (The chocolate may "seize" or clump together. Don't worry, the milk will dissolve it.) Whisk in the milk, a little at a time, and heat until completely blended. Remove from the heat and let cool.

2. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and vanilla and whisk to blend.

3. Pour the chocolate mixture into the cream mixture and blend. Cover and refrigerate until cold, about 1 to 2 hours, depending on your refrigerator.

4. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions. Makes 1 quart.

Vanilla Ice Cream Ingredients

This recipe calls for:

1 qt. half-and-half

1 cup sugar

1 tablespoon vanilla extract

2 cups whipping cream (Not whipped cream, but the liquid whipping cream as shown in the picture to the left.)


Stirring Vanilla Ice Cream

First Step: Mixing

Take your large mixing bowl and mix 1 qt. half and half with 1 cup sugar until the sugar is completely dissolved.

Second Step: Stirring Vanilla Ice Cream

Add 1 tablespoon vanilla extract along with the 2 cups whipping cream to your mixture. Once you do this prepare your ice cream machine. Make sure its freezing cylinder has been in your freezer for the required amount of time your machine's instructions calls for. Starting with the cylinder completely frozen is key to good ice cream. If the cylinder is not frozen completely, the ice cream will come out soupy.

Third Step: Freezing Vanilla Ice Cream

Put your ice cream mixture in to your machine, and turn it on. Then wait for it to freeze. This took our machine around 25 minutes. Make sure you don't turn your machine off during the freezing step. Once your ice cream has been freezing for 25 minutes it should look like the lower picture. If it is still not thick enough, or you don't care for soft serve ice cream, stick it in the freezer for a few hours and its texture will become more firm.

  • 4 large very ripe peaches,Peeled cut into chunks (about 1-1/4 to 1-1/2 pounds)
  • 1/4 cup water
  • 1/4 cup peach juice (or 3 tbsp juice and 1 tbsp peach schnapps)
  • 2/3 cup white sugar
  • 1 cup whipping cream (35% fat)
  • 1/2 cup sour cream (full fat)
  • 1/2 tsp vanilla
  • 1/4 tsp lemon juice
  1. Place the peaches, water, juice and schnapps in a medium saucepan over medium heat. Cover and cook until the peaches are soft, stirring a few times.
  2. Transfer peaches, along with the liquid, into a non-reactive bowl. Stir in the sugar and let the peach mixture cool, uncovered, to room temperature.
  3. When the peaches have cooled, add the cream, sour cream, vanilla and lemon juice. Puree with an immersion blender until blended but bits of peaches remain.
  4. Cover and chill the mixture thoroughly in the fridge. (You can put in the freezer towards the end to make it extra cold.)
  5. Churn in an ice cream maker according to manufacturer’s instructions.
  6. Eat with gusto.
